Leek And Mushroom Tart
with wholemeal and avocado pastry

Makes 10-12 slices

This super-tasty and healthy leek and mushroom tart can be served for breakfast, lunch or dinner depending on portion size!

Leek and Mushroom Tart  Rauform Pilates Recipe

Ingredients:

For the pastry

  • 50g linseed
  • 160g of ripe avocado
  • 1 egg
  • 275g wholemeal flour
  • tsp salt

For the filling

  • 175g button mushrooms
  • 175g Swiss brown mushrooms
  • 1 medium onion
  • 1 leek
  • 250g cottage cheese
  • 125g Greek yoghurt
  • 4 eggs
  • thyme
  • salt
  • pepper
  • tsp olive oil

Method:

For the pastry

  1. Line the bottom of a 25cm fluted tart mould with baking paper and set aside.
  2. In a mixing bowl add the linseed, flour and salt, then mix.
  3. With your fingertips, rub the avocado into the flour mixture until it’s well incorporated. It should resemble fine breadcrumbs.
  4. Mix in the egg and add a teaspoon of water. Combine until a smooth dough ball has formed and be careful not to overwork the dough.
  5. Wrap with cling film and allow to rest in the fridge for a minimum of 30 mins.
  6. Preheat the oven to 180c. Once rested, place the dough on your bench for 10 minutes before rolling out to about ½ cm in thickness and placing it into the tart mould. Prick with a fork. Place another piece of baking paper inside the rolled-out pastry and weigh down with baking beads or dried chickpeas and bake in the 180c pre heated oven for 20 minutes.

For the filling

  1. Quarter the mushrooms and sauté on medium heat until golden brown. Remove from pan. In the same pan add diced onions and leek. Cook until soft and then allow to cool.
  2. Place the cooled mushrooms, leek, and onion in a bowl, season with salt and pepper.
  3. Add the cottage cheese and Greek yoghurt to the bowl. Lightly beat the eggs and add to the rest of the filling ingredients. Combine well.
  4. Pour the filling into the prebaked tart shell. Lower the oven to 160c and bake the tart for 25 minutes. Test to see if the tart is set by shaking it gently. If it still wobbles cook for a further 5-10 minutes.
  5. Once done, remove from the oven and allow to sit for 10-15 minutes before removing from the tart ring.
