Maple Coconut Granola

Serves 40

It’s super easy to prepare this healthy maple coconut granola – it is crunchy and naturally sweetened with maple syrup, yum!

Maple Coconut Granola Recipe by Rauform Pilates and Fitness

Ingredients:

  • 300g rolled oats

  • 300g quick oats

  • 300g puffed brown rice

  • 100g pecan nuts

  • 100g almonds

  • 100g almond flakes

  • 100g pepitas

  • 100g sunflower seeds

  • 50g sesame seeds

  • 250g shaved coconut

  • 100g flaxseed (linseed)

  • 250ml maple syrup

  • 100g coconut oil

  • 250g dried diced apple

Method:

  1. Pre heat your oven to 110°C.
  2. Place all the dried ingredients into a large bowl and mix thoroughly. 
  3. Mix the coconut oil and maple syrup together along with 150ml of water. Add the wet ingredients to the dry ingredients and mix well.
  4. Place the mixture into a couple of large deep baking trays and put in the oven.  Bake for several hours mixing with a spoon every half hour to break up the mixture.
  5. The granola is finished when the mixture is dry and crunchy. 
  6. Once cooled, store in airtight containers.
  7. To serve, add your favourite fresh fruit, yoghurt, milk or however you like your granola.
