Spicy Pumpkin Soup

Serves 4

Ingredients:

  • 20g fresh ginger⁠
  • 2 cloves garlic⁠
  • 1 red chilli⁠
  • ¼ Japanese or kent pumpkin ⁠(skinned, deseeded)⁠
  • 4 medium carrots⁠
  • sesame seeds⁠
  • yoghurt⁠
  • fresh coriander⁠
  • olive oil⁠
  • salt⁠

Method:

  1. Slice the garlic, ginger & chilli – add to a pot⁠ & cook in a little olive oil over a med-high heat.
  2. Meanwhile, cut the carrot & pumpkin into similar sized pieces⁠ & add to the pot. Cover & reduce heat to allow the vegetables to⁠ steam in their own juices for 10 mins, stirring often.
  3. Add 4 cups of water & gently simmer until vegetables⁠ are soft.⁠
  4. Blend with a stick blender until smooth⁠, add salt to taste.
  5. Pour into 4 bowls and serv⁠e with yoghurt, fresh chilli & coriander.
