Spicy Pumpkin Soup
Serves 4
Ingredients:

20g fresh ginger

2 cloves garlic

1 red chilli

¼ Japanese or kent pumpkin (skinned, deseeded)

4 medium carrots
-
sesame seeds
-
yoghurt
-
fresh coriander
-
olive oil
-
salt
Method:
- Slice the garlic, ginger & chilli – add to a pot & cook in a little olive oil over a med-high heat.
- Meanwhile, cut the carrot & pumpkin into similar sized pieces & add to the pot. Cover & reduce heat to allow the vegetables to steam in their own juices for 10 mins, stirring often.
- Add 4 cups of water & gently simmer until vegetables are soft.
- Blend with a stick blender until smooth, add salt to taste.
- Pour into 4 bowls and serve with yoghurt, fresh chilli & coriander.
