Cherry Tomato, Avocado And Feta On Rye
Makes 4 slices
This delightful and quick recipe is going to be your staple for breakfast or brunch!
Ingredients:
- 2 ripe avocados
- 250g cherry tomatoes
- 400g cooked chickpeas
- 100g tahini paste
- 1 clove garlic
- 1 lemon
- 1 lime
- 100g danish feta
- 4 slices of dark rye bread
- 50 ml red wine vinegar
Method:
- Make the hummus by grinding the chickpeas with the tahini, lemon juice, garlic, and a little water until smooth. Add half of the feta and blend in. Add salt and pepper to taste and set aside.
- Halve the cherry tomatoes, and dice the avocado in similar size pieces. Add both to a bowl and gently mix with the red wine vinegar. Dice remaining feta and add to the mix.
- Toast the rye bread to your liking.
- To serve, spread the hummus mixture on the toast with a spoon making a small well for the avocado mixture to sit in. Spoon the avocado mix on top, and finish with some cracked pepper and coriander leaves.
