Zucchini Sundried Tomato And Feta Muffins Rauform Recipe

 Ingredients:

  • 4 medium zucchinis
  • 80g chopped sundried tomato
  • 80g feta
  • 4 medium eggs
  • 200g wholemeal self-raising flour
  • 10g baking powder
  • 1 tablespoon olive oil

Method:

  1. Pre heat your oven to 180 degrees Celsius.
  2. Grate the zucchini and add to a frying pan on medium heat. Sauté until lightly golden.
  3. Allow the zucchini to cool to room temperature and add the sundried tomatoes and crumble in the feta. Lightly beat the eggs and add to this mixture.
  4. In a mixing bowl, combine the self-raising flour and baking powder. Add the wet ingredients and mix until a consistent batter is formed.
  5. Dab a muffin tray with a little olive oil and spoon the muffin batter into each mould only filling ¾ full.
  6. Bake in the oven for 15-20 minutes.
